Miraflores farm has undergone a remarkable transformation under the stewardship of Edwin and his family. When Edwin's father first acquired the land, it was producing only commodity coffee on depleted soil. Driven by a vision of a better future, they embarked on a journey to revolutionize both their production methods and their way of life. They began to innovate the ground and plant new varieties, such as Caturra and Colombia. Edwin, who grew up with the aroma of coffee permeating his childhood, now manages the farm with a passion that stems from those early years. The entire family is involved in the cultivation process, making coffee not just a crop, but the very foundation of their lives, bringing joy and opening doors to new opportunities.

A turning point for the family came when Edwin, inspired by a friend's success, decided to plant Pink Bourbon. This decision marked a shift from volume-based production to a focus on quality. The Pink Bourbon variety, while demanding more space, proved to be a game-changer with its disease resistance and ability to withstand sudden climate fluctuations.

However, Edwin quickly realized that superior varieties alone couldn't guarantee exceptional coffee. He turned to InConexus for support, gaining valuable insights into seedling selection, innovative training methods, and process improvements. This partnership also introduced sustainable practices in soil management, reforestation, and water conservation, aligning the farm's operations with environmental stewardship. The farm's evocative name, "Miraflores," is more than just a title – it's a reflection of the coffee's unique flavor profile. The coffee plants thrive under a canopy of diverse trees, some of which produce vibrant yellow flowers. These blossoms release an aroma reminiscent of sugar cane, infusing the air and subtly influencing the coffee's distinctive taste. This natural synergy creates a beautiful harmony between the land and the final cup, offering coffee enthusiasts a truly immersive sensory experience.

Edwin's dedication to the environment shines through in the carefully maintained forest reserve on the property. This verdant sanctuary not only provides ideal shade for the coffee plants but also safeguards a pristine stream running through the land. As Edwin looks to the future, his plans include expanding the farm's varietal selection, further refining their processes, and upgrading infrastructure. These steps are all aimed at continually improving the cup quality of their coffee, ensuring that each sip continues to tell the sweet, evolving story of Miraflores farm.

Processing

This lot is Pink Bourbon varietal honey processed. Only ripe coffee cherries were harvested, carefully selected by density, and sanitized. The pulp (skin) and fruit were removed from the coffee cherry, leaving a thin layer of sticky mucilage, which was not washed. The coffee cherries were then placed on air-flow canopy beds and dried for 16–20 days.

The coffee was regularly turned, at least three times a day, to prevent mold. Once dried, it was placed into bags and stored in a clean, humidity-controlled storage room to ensure its quality and preserve its unique flavor profile.

Bag or tube?

For our coffee, we use recyclable bags, which are more suitable for the coffee, or tubes. The choice of packaging is up to you.

The tubes are great as gift packaging. We would be happy if you reused the tubes for other things (for pencils, glasses, etc.), or if you bring the tube back when you come for more coffee.
