Washed processing
The harvest of the coffee was done in a very selective manner; only ripe cherries were collected. The coffee was then selected by density and kept in a tank, still in cherries, for 24 hours. After this, the coffee was de-pulped and fermented in the tanks for 32 hours.
Once the fermentation process was completed, the coffee beans were washed and placed on ventilated roofs, where they were carefully dried for 18 to 25 days, depending on the weather conditions, and regularly turned. The entire process is monitored and controlled to ensure consistency and the ability to replicate it in the future.
