Cerrado Natural
The lot we selected was processed using a method known as Cerrado Natural. This process means the cherries were left on the trees for a longer time, where they began to dry under the intense Brazilian sun, eventually shriveling and wrinkling like raisins. This technique is only possible in very dry and stable weather during the harvest season – in many regions, drying coffee on the tree can be risky (excess moisture can lead to mold or other microorganisms). Thanks to the unique conditions of the Cerrado region, this process is achievable and brings excellent benefits to the final cup.
The extra time on the tree allows for an incredible concentration of sugars and minimal fermentation during patio drying. The result is a cup with intense, rich sweetness reminiscent of dried fruit, a full and velvety body, and notes of ripe tropical fruit.
