The coffee comes from the Cajamarca region, located in northern Peru near the Ecuadorian border. It has been processed using the traditional washed method. Only ripe coffee cherries were harvested and then sorted by size. The next step involved washing in water before depulping and fermentation in tanks. After fermentation, which lasted 12–18 hours depending on the weather, the coffee was dried for approximately 7–10 days.

Palo Blanco

Palo Blanco is a community in the Cajamarca region of Peru. Located in the northern part of the country, Cajamarca is a significant coffee-growing area. The altitude ranges from 1,200 to 2,000 meters above sea level, providing ideal conditions for specialty coffee.

Farmers in Palo Blanco, like those in other parts of Cajamarca, typically cultivate small plots of land, usually between 1 and 3 hectares. These producers mainly grow traditional varieties such as Caturra, Bourbon, and Typica, using sustainable farming practices, including shade-grown cultivation.

Challenges faced by farmers in this region include unpredictable climate conditions due to climate change, limited infrastructure, and difficult market access.

Once the coffee is ready, it is transported to Falcon’s warehouse in Jaén, where its quality is assessed. At this stage, the price is determined based on cupping results and physical analysis. Finally, the coffee is taken to the Café Selva Norte SAC facility, where it is inspected for defects, then packed and transported to the coast for export.

Bag or tube?

For our coffee, we use recyclable bags, which are more suitable for the coffee, or tubes. The choice of packaging is up to you.

The tubes are great as gift packaging. We would be happy if you reused the tubes for other things (for pencils, glasses, etc.), or if you bring the tube back when you come for more coffee.
