Bakers at Alf & Bet prepare sourdough breads and pastries daily, focusing on timing, technique, and flavor. They combine traditional methods with local ingredients, explore new recipes, minimize waste, and are not afraid to use pastry techniques for creating sweet baked goods. Craftsmanship, patience, and a desire to learn are integral to their approach — each baked item carries the story of its place and the people behind it.

Chefs at Alf & Bet prepare seasonal dishes using high-quality ingredients and bakery products — sandwiches, filled buns, soups, as well as pizza and focaccia. They focus on craftsmanship, bold flavors, and respect for the ingredients, while continuously collaborating with suppliers and the team to innovate the menu. Cooking here blends tradition with experimentation and a connection to the local community.
Roaster
The roasting process at Alf & Bet is guided by the character of the coffees and the stories of the producers. In our profiles, we aim for sweetness and avoid underdevelopment — often preferring a slightly darker roast. Our roasters monitor quality, technique, and the impact on flavor, maintain personal contact with farmers and baristas, and contribute to sustainable sourcing decisions. They test new methods and ensure transparency with both suppliers and guests.
